A medium to dark red wine, Chambourcin is a medium-sized French-American hybrid berry with a blue-black color that grows in large clusters that must be thinned. Susceptible to multiple fungal diseases, Chambourcin has a difficult time in the northern Missouri environment. Ripening around the same time as Concord, Chambourcin is processed much like a red wine and produces a full-bodied, dry red wine. It has a moderately fruity taste and may also have hints of berry.
This is barrel aged in French oak cask, and produces a wonderfully Black Cherry nose, with a smooth medium body finish.
This wine pairs well with red meats, pork and lamb.
Serve at room temperature.
