This dessert wine is made from 100% Missouri grown Vignoles grapes, lightly pressed and cold fermented with fresh Tahitian and Madagascan vanilla beans fresh from the importer. The addition of fine California brandies completes the process, after which the wine is milk fined, an ancient clarifying technique, before transfer to neutral French oak barrels for aging, where the loss of moisture through the wood fibers intensifies and focuses the wine's character over time.
The result is a unique dessert wine with a creamy mouth feel and hints of tropical fruits and honey. Best served ice cold, Topaz is a perfect compliment to fresh fruit, light cheeses, or alone as a rich satiating dessert drink.
